Beetroot Halwa

 

Prep time-under 15 min
Cook time-under 30 min


Ingredients :

Beetroot grated - 2 cups heaped
Sugar -3/4 cup
Milk - 2 cups
Cardamom powder -1/4 tsp
Almonds/Badam - 10
Cashew nuts - few
Ghee - 1/4 cup
Maida - 1cup



Description :

  • Wash, peel the skin and grate beetroot.
  • In the same pan, heat a tbsp of ghee, add grated beetroot and fry .
  • Then add 2 cups of milk and cook the beetroot on low flames, stirring in between. Cook till the beetroot becomes soft and all the milk evaporates.
  • Then add sugar until sugar dissolves and gets mixed well with the beetroot.
  • Now add cup of maida in water and mix well with beetroot continuous stirring in low flame is required  .
  • Add cardamom powder, ghee and cook for a few more seconds.
  • Garnish with cashew nuts, almonds . Serve hot or warm.

Pesarattu Dosa/Green Gram Dosa


Cooking Time: 30 Minutes

Preparation Time: 15 Minutes


Ingredients:

  1. Whole green gram(Pesalu) - 1 cup
  2. Raw rice - 1 tbsp
  3. Green chillies - 2
  4. Onion - 1 medium sized chopped finely
  5. Ginger - 1/2 inch piece
  6. Garlic - 5 (optional)
  7. Coriander leaves- 1 tblsp chopped
  8. Hing  - a pinch
  9. Salt - to taste Water - as required


Description:
  • Soak green gram(Pesalu) with rice overnight for 8hrs-10hrs.
  • The next day drain water and grind it with ginger and green chillies to a smooth batter, add little water to make to batter consistency.
  • Then mix in salt, hing, chopped onion, garlic and coriander leaves and mix well. 
  • Add water if the batter is too thick.
  • Heat a dosa on pan, take a laddle full of batter and spread it thin like dosa. Sprinkle oil on the sides and cook on both sides.

While Serveing put bit butter on it..!!!

Yammmmy :)  Pesarattu dosa is ready to be served... can also serve it with tomato sauce or with red chilli chutney , but tastes best with coconut chutney!!!!!

Gongura pachadi / Red sorrel leaves




Cooking Time: 15 Minutes

Preparation Time: 15 Minutes


Ingredients :
  1. Gongura leaves / Red sorrel leaves -2 cups
  2. Turmeric-one pinch
  3. Green chillies-4 chopped 
  4. Tamarind - 1 tsp
  5. Salt (rocksalt) -1 tsp  
  6. Onion peeled -1 cup* chopped into small 
  7. Red chillies -2
  8. Curry leaves- 4-5 in number
  9. Mustard-1 tbsp
  10. Urad dhal -2 tbsp  
  11. Sesame seeds -1 tbsp 
  12. Cumin seed-1/2 tbsp 
  13. Asafetida-one pinch
  14. Oil for fry

Description:
  • Wash gongura leaves, fry in a pan with green chillies and onion in little oil .
  • Add some turmeric close the pan with a lid, cook for a while .
  • Grind mixture well with  tamarind and salt as per taste.
  • Season the mixture with Red chillies,Curry leaves,Mustard ,Urad dhal,Sesame seeds,Cumin seed,Onions and add asafetida at end.
Tasty Gongura pachadi is ready to serve with Rice and Chapatti.. !!!

Kakarakaya / Sweet & Sour Bitter Gourd




Cooking Time: 60 Minutes

Preparation Time: 20 Minutes



Ingredients: 

  1. Bitter Gourds – 250gms
  2. Tamarind – 20gms
  3. Grated Jaggery – 40gms
  4. Curry leaves – Few
  5. Fenugreek Seeds – 3 Seeds
  6. Bengal Gram – 1 1/2tsps
  7. Black Gram – 1tsp
  8. Mustard Seeds – 3/4tsp
  9. Cumin Seeds – 3/4tsp
  10. Turmeric Powder – 1/4tsp
  11. Red Chili Powder – 2tsps
  12. Salt to Taste
  13. Oil – 6tsps 


Description: 


    • Heat a pan and add oil to it.
    • When the oil is hot add fenugreek seeds, bengal gram , black gram, mustard seeds ,cumin seeds and add chopped curry leaves fry well.
    • Now add cooked bitter gourd pieces and mix well. Add salt, turmeric powder, red chili powder and add the ground tamarind paste.
    • Add some (10 to 15ml) water and cook covered on slow flame for 3 minutes.
    • After 3 minutes remove the lid and cook for a minute. 

      Transfer the curry to a serving bowl. Serve hot with plain rice or with chappathi...!!!
